Now is the perfect time to do a fresh vegetable stir fry. What’s wonderful about a stir fry is that it’s packed with vitamins and minerals and very easy and quick to prepare. Chop onions, garlic, ginger, celery and saute in oil. You can add bite-size pieces of chicken  while sauteing. Make sure the chicken is fully cooked before adding more vegetables, then add bite-size broccoli florets, sliced red, green and/or yellow peppers, soy sauce and a little water, cover and steam a few minutes. You want your veggies to be crispy, not soggy. Prepare your favorite rice and top with this colorful vegetable mixture for a delicious and very nutritious dinner. Add more soy sauce as needed. For a spicier dish add a little sesame chili oil or red pepper flakes.
