Many of us take onions for granted. We use them in most foods but rarely think about how they can help reduce blood pressure, lower cholesterol levels and reduce the risk of heart disease. To maintain the nutritional value of onions, it is best to let them rest for 5-10 minutes after chopping before using them. Sautéing in oil at high heat destroys many of the nutrients. It is best to saute them in a small amount of broth to soften them. You can add the onions and the broth to the dish you are preparing. Caramelizing onions tastes great, but releases free radicals which can be harmful to our health. The stronger the onion smell and the more your eyes water, the richer the nutrients. Chill onions just before using and you won’t cry!
