Make a Mexican dinner for something different for dinner tonight. Prepare a Corn and Black Bean Salad. Mix chopped green and red peppers, celery, onions, jalapenos, corn and black beans with a little canola oil, red wine vinegar, salt and pepper. Marinate in fridge for 1 hour to blend flavors while you make burritos. Take a tortilla and spread refried beans over the surface, top with some cooked rice, chopped tomatoes, cooked ground beef or chicken, cheese and top with salsa. Fold one edge of the tortilla and then roll up and secure so the filling doesn’t fall out. You can warm the burrito in the microwave. Make cheese quesadillas by spreading cheese over half of a tortilla, top with a few jalapenos, fold tortilla in half. Bake in 350 oven until golden and the cheese melted. Cut into wedges. Get ready to enjoy this delicious salad, burrito and quesadillas for a fun Mexican evening.
