TIPS AND TIDBITS – Spicy Mexican Corn and Bean Salad

For a change, enjoy a spicy Mexican Corn and Bean Salad with your BBQ chicken. Combine either fresh or frozen corn with chopped green and red peppers, garlic, celery, onion, chopped jalapenos to taste, and your favorite beans. Mix in your favorite vinaigrette dressing or make your own. Let this delicious and very nutritious salad rest in the fridge for at least an hour to allow the flavors to marinate.
