Looking for an easy soup to make for lunch or dinner? Potato and leek soup can be prepared in 30 minutes. Saute 2 chopped leeks and one small chopped onion in either olive oil, butter or Earth Balance  about 5 minutes until softened. Add 4 small cubed potatoes and 4 cups of vegetable broth and salt and pepper to taste. Cook 30 minutes just until potatoes are cooked. Serve with bread and a salad for a complete meal. Enjoy!
